Amontillado Hidalgo is produced according to the traditional methods as stipulated by the controlling body of the Denomination of Origin 'Jerez-Xeres-Sherry'.

Fino, or in this case Manzanilla sherry is aged until the protective covering of flor yeast dies back as a result of consuming all the nutrients in the wine.

Amontillado is therefore a combination of flor (biological) ageing with oxidative ageing to follow. Aged in a fractional blending solera system to ensure consistency, this wine is lightly sweetened prior to bottling.

Taste: Rich warm flavour, slightly sweet. Smooth.

Aroma: Full nutty.

Serve at room temperature as an aperitif or as an accompaniment to desserts.

Producer Information

The Hidalgo family originally came from the north of Spain but moved to the south in the eighteenth century, when King Carlos III was encouraging new people to settle in Andalucia. At first the Hidalgos owned estates in the area, and later 'salinas' for making salt. They then entered the wine trade in 1792 when Jose Pantaleon Hidalgo acquired a sherry business from his father-in-law, thus founding the firm that exists today.
Since then the company has been passed down from father to son and, six generations later remains completely independent and is still owned and run by the Hidalgo family. It is today one of only a handful of fully independent Sherry producers. The company continues to occupy its original premises in the centre of Sanlacar de Barrameda and has always been one of the most important bodegas in this town. It has long been respected for the quality of its wines. As far back as 1875 we were winning prizes in Vienna.
Today the emphasis is still on quality and to ensure this we use only the grapes from our own vineyards. These cover about 200 hectares of the best Albariza soil in Balbaina and Miraflores; areas of the Jerez Superior District that produce much sought after grapes. This is especially true for the lighter finer styles such as Manzanilla and Fino. We continue to use traditional methods and all our wines are matured in old casks of American oak, some of which predate the firm itself. Vinacola Hidalgo y Cia. S.A. also possesses the modern equipment and expertise necessary to meet the most exacting quality control standards and to offer the fastest and most efficient service possible.
We produce the whole range of Sherries: Fino, Amontillado, Oloroso, Medium, Cream, Pedro Ximenez etc. but our most important wine is Manzanilla.
Our reputation in the wine market today is as a top quality Sherry and Brandy producer. A continuous flow of favourable press mentions and prizes in international wine tastings, such as London's International Wine Challenge, support this reputation.
